A black vinegar brewed by Uchibori of Yaotsu, Gifu, using techniques handed down for generations. It offers a natural rice-derived sweetness and a rich, appetizing aroma. Its soft acidity blends smoothly into delicate dishes, while a dash over stir-fries or grilled fish brings out umami. Mix 3 parts vinegar to 1 part water with honey to enjoy it as a drinking vinegar.
