Shobun Su
From the 300-year-old Shobun Su brewery, this cloudy ('nigori') brown-rice black vinegar is made by deliberately keeping the brewery's resident acetic-acid bacteria, fermented slowly and undisturbed in earthenware crocks. Made from only Kumamoto organic rice, it is mellow and gentle rather than sharp, with a toasty aroma. Enjoy it as a drinking vinegar diluted with water or sparkling water, or use it in everyday cooking in place of ordinary vinegar. A standout for lovers of fermented foods.
